I made some cookies today that are just too good not to share. So here goes:
(Umm... I'm not sure what to call them. They're chocolatey-peanut butter and chocolate chippy thingies.)
2 sticks of butter
2 1/2 cups of sugar
2 tsp vanilla extract
3 cups flour
1 cup cocoa powder
1/2 teaspoon baking powder
1 1/2 teaspoons of salt
1 bag peanut butter chips
1/2 bag chocolate chips (I used the mini)
Beat butter and sugar til nice and fluffy, then beat in eggs and vanilla.
Combine the dry ingredients thoroughly, then add to the butter mixture.
Stir in all the chips and chill the dough for 30 minutes.
Roll into a ball in your hand and bake for about 12-15 minutes.
They bake up puffy and tall and round and taste fabulous!
Variations I can think of:
Peppermint extract instead of vanilla, and dark chocolate chips instead of the peanut butter and you'd have a rich, minty chocolate cookie that would knock your socks off.
Some people might be tempted to use some white chocolate chips instead of the peanut butter, but since white chocolate is anathema I won't speak of it here. Honestly, some people simply have no respect for real chocolate. Someday that icky white stuff will no longer be called chocolate, but until then, it is anathema.
So, go on now. Bake! Fill your house with this yummy-licious smell and then come back and thank me profusely.
Like any of these cookies will last that long.
